The Alfajor

The alfajor...when I mention the name of these wonderfully caramel filled cookies that are rimmed with coconut and powdered with sugar most people have no clue what I'm talking about (with in reason). They just take the name as it sounds and they run with it.  The name is literally pronounced alpha-whore. Okay okay I know that isn't written phonetically, but whatever you get the point. 

Anyways, I was introduced to the alfajor in Peru and when I got home I was craving them. So I when I got home and got settled in I decided to search for a recipe for alfajores.  I finally came across one on the internet (I unfortunately don't remember which website...) and decided that I would try to make them. The other day I really felt like baking and I had to try the recipe out.

The recipe itself was pretty good. The reason I chose that recipe was because the blog that I found it on said that she made some for a Peruvian dinner hostess and the hostess loved them. I figured if a Peruvian liked them just fine that means that the recipe should be fine with me...I'm guessing the Peruvian would know better than me. 

The only problem that I really had with the recipe is that the dough was really too sticky. There are a couple of things you can do to prevent this so I you know stuck it in the fridge for about an hour and
I made sure I had plenty of flour on the cutting board that I used to roll out the dough.  After that it went so much better. I decided to throw a little twist on my alfajor...I made some heart shaped ones!!! I even made the dulce de leche (caramel) homemade (it's easier than it sounds). 

All in all, these wonderful cookies were a lot easier to make than I thought and I will be making them again!! My mama actually asked me to make them for Christmas dinner :D

 Dulce de leche!! I probably should have baked it longer for the sugar to caramelize more, but our oven is really strange so I was afraid I was going to burn it...it already had to be in the oven for an hour at 425 degrees!!! 

My finished product! They were so good! I will be making them again...very soon!!!
